Vital Records are the best and most valuable record for the the genealogist. They are baptismal, birth, marriage, death records. Each province in Canada started recording their vital records at various years. For example, Manitoba started in 1881 while Ontario started in 1869.
Most vital records from province to province are pretty standard but the forms used usually change over the years. The information that is on a vital record is a series of questions asked, and is filled out by a s called the infomant. Most are filled out by a surviving family member or sometime where there is no family member , the informant is a friend, or the public trustee. So the infomation that is on the vital records is just as good as the answers that the informate gave. I would guess most are very accurate and can be a wealth of infomation while others are not completed as the informate did not know the answers to the questions on the form.
